Hi mate,
I have dome the same thing and decided to leave it to the professionals, not because I was afraid of the airbag which can be easily disabled by pulling a fuse, but because the bolts holding the steering wheel in place are impossible to undo with hand tool and it needs an air gun.

Here you go mate.
1. Disconnect the battery and wait for 3 minutes at least.
2. Pull the airbag fuse from driver's side fuse box (it is marked as AIRBAG)
3. Remove the plastic inserts from each side of the steering (depending on your model, one side might have the cruise control and the other side might have the radio/audio controls)
4. Unscrew the steering controls from their place.
5. You will now see a golden type bolt on each side of the steering wheel and these bolts are holding the airbag in place. Use the air-gun to unbolt these.
6. Disconnect the airbag module harness and also the horn harness.
7. Remove the airbag from its place....GENTLY with no sudden shocks
8. You will now see the big centre nut holding the steering wheel in place.
9. Remove this nut and pull the steering wheel and replace it with the leather one.
10. Follow the installation in reverse order.

To cut power to the airbag and the entire SRS system (this is what the manual says) but personally I believe removing the fuse for the airbag will be enough. If you have the head-unit PIN with you, disconnecting the battery won't be a hassle either (just to be on the safe side). You don't want to see your in-law fly to the back of the exy when he gets a knock-out from the steering wheel LOL
