The head gasket (engine gasket as he called it) seals the pistons from the cooling system holes in the engine shell.
If you have a blown head gasket (a hole in it somewhere) it would let pressure from the pistons into the cooling system, pressurising it and also causing it to lose coolant and overheat.

It will run that hot either due to a blown head gasket or your radiator cooling fans not working.
Check the fans and if they are working then get the head gasket seen to.

If both fans are working then check your radiator fins to make sure they are not blocked and that air can pass through it. Driving at 70kph with a normal healthy engine would give plenty of cooling to not raise the temp so high.
Difficulty starting when hot could be from the blown head gasket like the high temp you are getting. If there is a small hole then when the engine warms up you would lose compression in one or more cylinders which would make starting difficult but when cold the hole would be smaller and not so much compression would be lost resulting in easier starting.
A faulty thermostat could cause the high temp but starting would not be affected in that case.
Normal operating temp for our engines would have the needle pointing to the D in a similar way as the fuel gauge in your pic.

You check the radiator fins by looking through them from the front of the Xtrail grille to make sure you can see air gaps. If there is are no air gaps because most of them are blocked with mud or bugs then air cannot pass through to cool it.
If your temperature has been that high for quite some time before the difficult starting then I suspect it is the gasket.

The fins look good.
If your expansion tank started full and is not half full then your engine is losing coolant. Top it up and see if it continues to lose coolant each day.
You will not see the coolant loss until the next morning.
The engine heats up and as it des it usually expels some liquid into the expansion tank. Then when it cools down at night, the radiator draws some liquid back in from the expansion tank.
If there are no leaks then the level in the expansion tank willl be the same each morning since what goes in is drawn back out.
If there is a leak then coolant will be lost and that amount will be replaced by some coolant from the expansion tank and the level will continue to decrease each time.
