A bow wave is exactly what you want to create when crossing a river.
It means the car uses less effort to cut through the water and reduces the risk of water being sucked into the engine.
The guy in the video should have really tied a tarp to the front of the car to help with his crossing.

OK, I agree with the tarp, but how does a bow wave mean LESS water will get into the engine when the Xtrail air intake is at the front of the grille right under the bonnet lip ?

Tony is correct, a bow wave is needed for a safer water crossing like that, this is done by keeping enough momentum to create a gap in the water where the nose of the car (the bumper) will cut through it and keep it away from the bonnet/intake.

The article mentiones a bow wave keeps water out of the engine bay. True.
But surely a bow wave is created by something pushing the water and that something would be the grille and bonnet.
The article also mentions that a water crossing should not be done where the water level is higher than the tyres and never higher than the air intake. So if a bow wave is created, won't the water level created be higher than the air intake which is directly at the front of the bonnet lip ?

When I mentioned not too fast to create a bow wave, I was meaning the type of wave which typically rides over the top of the bonnet.

It won't ride over the bonnet, as the bumper is the one creating the bow wave, not the bonnet. Check my water crossing and you'll see what I mean.

Also, this is where momentum and continues motion is required to keep the bow wave away from the bonnet, so you end-up pushing it further.

The return-trip of the "Tarr Steps" video (shown as an option after viewing the first link above) shows it in better detail as you can see how high up the grille the water goes...
