Firstly Adam, I might suggest that 18" rims are not very good for offroading with A/T tyres due to the limited sidewall height. They really are only suited to H/T tyres for onroad and light beach driving on mostly hard sand.
For offroading and soft sand you should have smaller rims with a higher profile tyre to allow plenty of sidewall height to "bag out" and give you a wider footprint at low pressures. My suggestion would be for the standard 16" rims with 70 profile tyres.
