Bill, I think your racks sit a different distance away from the roof than my Series 1 racks.
This might explain any difference in buffeting.
I cannot say with confidence there was no buffeting with mine, but will check on the way to work tomorrow for you and let you know.

The canvas would flap around and create too much noise, regardless of how tight you could get it to stretch.
My thoughts would be a solid aluminium plate, screwed to the underside of roof racks could work. If you have the leading edge of the plate under the front roof rack then wind could not tear it off. You could either finish the back of the plate under the rear roof rack or make brackets which support the end of the plate from the roof rails at the rear just infront of the spoiler or tailgate.
Not really a wind deflector though, so a new thread would have been better for this and double-posting in any "sun roof" thread such as you did in this one really is not appropriate either as it mixes answers with wrong topics. I expect Admin to remove the other post.
