Hi Gail,
I did this trip in 2011 and it only took us 4 days to Maree from West Wyalong via Cobar, White Cliffs, Cameron Cnr and the Strezlecki Track, with overnight stops at Emmdale (btw Cobar & Wilcannia), Cameron Cnr and Blanchwater (on the Strezlecki) and we took it fairly steady.
I'm sure if you stuck to the bitumen though and went via Hay you could do it in 3 days from Sydney. You can take scenic flights from Maree, but if you had the time I'd suggest you go up the Oodnadatta track to William Creek, as you can see South Lake Eyre from the track on the way and take a flight out of William Creek.
If you do go to William Creek I'd recommend stopping in at Coward Springs for at least 1 night on the way, it has a fantastic camp area with a bore 'spa' to relax in with a coldie or wine!
